These are a number one request for breakfast at the SushiFam home. We call them "princess waffles" because the batter is pinkish-purple and the rims of the waffles are slightly pink. When we add more spinach than beets, they turn out green and we call them "Shreck" or "Incredible Hulk" waffles. The kids get excited about them and mom gets excited because she knows the kids are getting a serving of veggies, fruit, whole-grain, protein, and omega-3's in one silly waffle! They are not sweet when plain, but if you add some maple syrup, yogurt and/or fruit as a topping, they are perfect. Here's the recipe:
1 16 oz. carton cottage cheese
1-2 cups rolled oats (not quick oats)
1/3 c. ground flax meal
1/2 c. spinach (fresh or pureed is fine)
1/2 c. beet puree
4 eggs
1-2 scoops protein powder
1 banana
Blend in blender and cook on waffle iron. (If batter is too thick, add more eggs. If batter is too runny, add some more oats). Keep in mind they will be darker than your regular waffles because of the vegetable ingredients!
